Mission Statement for menu

January 25, 2019 Misc

In today’s ever-growing food & drink markets, and diverse offers we stick to some simple basic principles, by sourcing locally where possible the best Scottish products and ingredients available.

We have some partners that help us along the way and feel it’s important for our customers to know who these partners are…

Williams Brothers (https://www.williamsbrosbrew.com/)

Williams Brothers Brewery is a Scottish family-owned microbrewery, founded and operated by brothers Bruce and Scot Williams. It is based in Alloa, Clackmannanshire in central Scotland. Williams Bros started brewing in 1988. Their first ale was inspired by a 17th-century Gaelic recipe for leann fraoich (heather ale).

Inverarity Mortons (https://www.inveraritymorton.com)

Founded in 1945, Inverarity Morton is Scotland’s leading independent wines and spirits merchant. By focusing on our people, our product and our service, we have worked hard to establish a reputation at the forefront of our industry… but we never rest on our laurels!

Braehead foods (https://www.braeheadfoods.co.uk/)

Brings Scotland’s larder together into the one place and gives easy access to today’s artisan and award-winning ingredients, black pudding from Stornoway, Ramsey of Carluke haggis, some of the isle of Arrans finest ingredients, farm assured chicken, smoked salmon from St james smokehouse of Annan as well as artisan Scottish cheeses from across the country

Corrigan’s fishmonger

A Glasgow institution sourcing the finest fish from across the country bringing our staples of fresh mussels, juicy prawns and salmon as well as feeding the chefs imagination of what’s been caught for our ever-changing lunch and specials menus

Tom Rodgers butcher (http://www.rodgersbutchers.com/)

Our neighbour based in Glasgow’s west end, this trusted award-winning butcher supplying the meat we eat. Supplying the ingredients to make our tasty burgers as well as the perfectly aged steaks of any cut. Also delivering high quality cuts of pork & lamb for our chefs ever changing menu and worth noting a special silverside for our Sunday only roasts

Dunn’s food and drink (https://www.dunnsfoodanddrinks.co.uk/)

Another Glasgow institution best known for the Garvies Cola delivered to your door. But what most people don’t know is they have been bringing dry ingredients to our restaurants for some years. In our climate we are not blessed with natural growing habitat for exotic spices so we have this partner to bring the spices of the world to us so we can infuse with local ingredients to create menu dishes

Patisserie Francoise

Also our west end neighbour, and one of the finest classic French bakeries delivering our fresh bread and buns most mornings still warm from their ovens. It doesn’t get any fresher

Glasgow fruit market (https://glasgowfruitmarket.co.uk/home)

We get our staple fresh veg daily, some ingredients from local suppliers as well as further afield in warmer climates where the weird and wonderful grow, and this allows the chefs the variety of choice that today’s diners expect from us
